Tepeztate is an ancient variety of maguey and requires up to 35 years to mature; these qualities mean it results in deeply complex and delineated spirits when produced well. In the region, this maguey is considered sacred, and traditionally it was distilled as part of ritual practice. All of the notes in mezcal are visible here: celery, raisin, plum, wood, white pepper, flowers, leather. Deeply complex and special.
